An outdoor pop up BBQ restaurant is coming to Gatineau for 6 nights only!

Gatineau, July 26, 2022 – Starting next Wednesday, Les Grands Feux du Casino Lac-Leamy is offering a new exclusive culinary experience to its participants: the Incandescent pop-up restaurant! You’ll have to be on site and arrive early to be able to enjoy a fire and charcoal cooking experience that promises to tantalize your taste buds!

As soon as you arrive, the smell of grilled meats and vegetables will put you in the best of summer. Smoke from Argentinean grills, mechouis and wood and charcoal barbecues will fill the atmosphere. Here is a small idea of what the participants will be able to experience.

L’Incandescent, the name of choice for this new pop-up restaurant, will be located on the banks of the Ottawa River, near the Alexandra Bridge on the site of Les Grands Feux du Casino Lac-Leamy every Wednesday and Saturday from August 3 to 20. The restaurant has been custom designed for the event and will use wood and charcoal cooking techniques as well as rare equipment that we are not used to seeing. It will bring together 2 guest restaurateurs per fire night and will invite participants to make delicious culinary discoveries in the form of dishes and side dishes.

An overview of the menu 

Smoked bison chorizo, foie gras s’mores, brisket on baguette à la lyonnaise, shredded bison fajitas with grilled vegetables, burratini with smoked tomato compote, piri-piri chicken à la portugaise and grilled corn. Just to name a few of the delicious dishes, here’s a taste of what’s to come at the Incandescent. Just the thought of it makes your mouth water.

Local chefs and local farms in the spotlight 

“Creating a pop-up restaurant with many of the region’s top chefs is like a dream come true! Gatineau and the Outaouais region are full of excellent restaurants and it’s a real source of pride to put this know-how in the spotlight during Les Grands Feux! I am even more impressed to see the exceptional cooperation between the restaurant owners who will be exchanging grills during the event to offer a unique and original experience to the public,” says Marc-Antoine Massicotte, President and CEO of Les Grands Feux du Casino Lac-Leamy.

On August 3 and 6, Le Cellier and Le Clandestin Cuisine créative will be cooking up beef from Brylee Farm.

“You can expect to discover French know-how dishes such as braised beef, fire-roasted vegetables in a salad and of course the inevitable beef tartar,” says Alexandre Gonnot, chef at Le Cellier.

“What I like about this project is that it will give all of us, chefs and entrepreneurs, a moment to come down to earth from our crazy lives and share our passions and the situation of the restaurant industry on this side of the river,” says Éric Duchesne, chef-owner of Le Clandestin, Cuisine créative.

On August 10th and 13th, the Chelsea Pub and Les Brûlés – Artisans Fumeurs will be cooking chicken from La Ferme aux Saveurs des Monts.

“We at the pub have been learning offset smoking for the last few years and have mastered our craft in our own ways, we promise you will be amazed with the flavours we are going to bring to Les Grands Feux evenings”, says Julio Martinez, chef at Pub Chelsea.

“For me, cooking over a fire represents a return to the basics and an art as old as time. It creates memories, it’s festive and it makes you want to toast,” says Jonathan Larouche, chef and co-owner of Les Brûlés – Artisans Fumeurs.

On August 17 and 20, La Boucherie des Vilains and Antonyme will prepare the bison of Domaine Mangalica. 

“This unique project of cooking over fire and charcoal for hundreds of people on the site of the Grands Feux is a dream come true for a chef like me who is passionate about BBQ cooking, twelve months a year,” says Romain Riva, co-owner and chef of Les Vilains Garçons.

“What motivates me about this great project of Les Grands Feux is to have this golden opportunity to work with great chefs of the region to do what we love”, says Marc-André Camaraire, co-owner and chef of L’Antonyme.
